No Flour Oatmeal Pancakes

While on vacation, we ran out of breakfast foods...actually, we had some, but it was just a little bit of everything. 

We had a few eggs, a sandwich bag of oatmeal, and some bread for toast.  Rather than make everything and have the kids argue over who got the one bowl of oatmeal, I tried my hand at creating a recipe for oatmeal pancakes.  I had remembered my mom's friend made some without any flour once and I was pretty amazed.

Surprisingly, they turned out great and everyone loved them! 

These are all approximate measurements, since the house where we stayed had no measuring cups or measuring spoons.

Ingredients
- 1 cup quick cook oatmeal (it was almost one sandwich baggie full)
- 3 eggs
- 3 tablespoons honey
- 1/4 stick butter, melted
- Milk (I added milk until the batter had a nice consistency to pour into the pan and not be runny)

Mix all ingredients.  Slowly pour into a hot skillet.  After you pour each pancake, use a fork to softly pat down the oatmeal so it does not all clump in the middle.  Flip each pancake to cook both sides.



I served these with honey, because I had no syrup!  The kids loved them.  These pancakes had a nice thick texture and were very filling.
